The Coffee Sensory Flavour Wheel is a vibrant, circular chart that helps coffee tasters describe the wide range of aromas and flavours found in coffee. Developed by the Speciality Coffee Association (SCA) in collaboration with World Coffee Research, it's a visual guide to sensory language, from the general to the specific.


🔍 How it Works:

  • The Center of the Wheel: Broad flavour categories like fruity, spicy, roasted, or sour/fermented.

  • Middle Layer: Narrows these down—fruity becomes dried fruit or citrus, for example.

  • Outer Layer: Offers the most specific terms, such as raisin, grapefruit, molasses, or cardamom.


🌈 Why It's Useful:

  • Describe what you taste: Instead of saying “nice,” you can say “jammy red fruit with hints of dark chocolate.”

  • Supports cupping and quality control: Common language helps roasters, producers, and baristas communicate clearly.

  • Guides training: It's used alongside sensory kits to train palates and build flavour memory.
